Paris and Madrid keep their best for the initiated: the table you have to ask for, the bar hidden behind a hotel garden, the night that begins when the concert ends. Those are the addresses I pass on here, the way I would over a drink, never the way a press release does.
Every place on these pages was booked in my own name, paid for with my own card and judged on one question: would I send someone I like there on an ordinary Tuesday? If it's here, the answer was yes.

Jordan Cohen is the founder and editor-in-chief of ALTO MAG, reporting from Paris and Madrid.
How we choose
Every address is visited, paid for and judged on the room, the welcome and whether we would go back on a Tuesday. No submissions, no sponsorship, no paid placement.
Photography
The photographs are those each establishment publishes itself — on its website, its press page or its press kit — and are credited to the house, with a link to where they appeared. A house that would rather not be pictured here only has to write to us.
