Hanada: ten seats, one menu, a door marked only 15

Masayoshi Hanada left the counter at Sushi B to open his own house on the quai Voltaire. Less than a year later, a first star, and still ten seats a sitting.

· Facts checked September 28, 2026

The façade is black lacquer, carrying the number 15 and nothing else; if you reach the Seine you have walked past it. Inside there is one menu, an omakase at €350, built on Mediterranean bluefin, Auvergne trout and Breton catch, served across two sittings of ten.

Hanada cooked at Sushi B, where he took a star in 2017, before opening this room with the restaurateur Paul Dupuy in 2025. The Michelin guide gave it a star in March 2026. No photographs or video in the room. Closed Saturday and Sunday; sittings at 7pm and 9.30pm.
