Éthanol: the Géosmine team's walk-in, from 5pm

Maxime Bouttier's second address sits a few metres from his one-star Géosmine, in a former cobbler's shop. No bookings, Spanish-style: you turn up from 17h30.

· Facts checked September 21, 2026

The room opened in February 2026 in a former cobbler’s shop at the corner of rue Jean-Pierre Timbaud and rue de la Folie-Méricourt, a few doors from Géosmine, where Maxime Bouttier holds a Michelin star. The model is Spanish: no booking, small plates with a glass from half past five, then a proper table once the evening turns.

Wine is the axis rather than the garnish — the cellar runs to more than 400 references, from a 52€ Mosse Chenin to a four-figure Échezeaux, so read it before the food. Service runs Wednesday to Saturday 17h30–00h30, plus Saturday lunch 12h–15h and Sunday 12h–17h; on a fine evening the pavement tables are part of the experience. Call 01 86 04 97 09 to confirm the day’s hours.
