Bar De Vie: eleven seats in a cellar, and no ice in the house

Alex Francis and Barney O'Kane took the 2026 sustainable bar award and No.34 in Europe with a limestone basement where sub-zero drinks arrive without a cube.

Comptoir De Vie opened on rue Saint-Sauveur in March 2025; the basement bar followed that autumn, in a limestone cave under the restaurant. Alex Francis and Barney O’Kane, both formerly of Little Red Door, run it without ice: custom ceramics and chilling technique hold the drinks sub-zero. In 2026 the house took the Ketel One Sustainable Bar Award and entered the first Europe’s 50 Best Bars at No.34.

Studio Ler’s handmade lava-stone counter, 11 seats, anchors Comptoir De Vie upstairs; the bar room has a large ceramic bar and two light-wood tables. The drinks rotate daily, with an ever-changing menu built on ingredient availability, and the five-course flight, around €55, comes in an alcohol-free version. Reservations apply only to the tasting menus upstairs, booked on SevenRooms via devie.bar, with a €30 per person deposit. Cave De Vie, next door, sells bottles and deli goods.
