Bar Nouveau: the best bar in France is two flights of stairs

The Art Nouveau room co-founded by Rémy Savage, Sara and Hadrien Moudoulaud and Marc Puzzuoli took the French title and No.5 at Europe's 50 Best Bars. A diminutive space; no reservations upstairs, set menu on OpenTable.

Bar Nouveau opened in 2023 in the former Quiet Man pub space on rue des Haudriettes, co-founded by Rémy Savage with twins Sara and Hadrien Moudoulaud and Marc Puzzuoli. In June 2026 it was named The Best Bar in France and placed No.5 in the inaugural Europe’s 50 Best Bars, after No.17 in the world list of 2025. Five Paris bars made the European ranking; this one leads them.

The basement runs a separate menu from the ground floor, so the seat you take decides what you drink. The bar keeps a large collection of antique Bimini glass, said to be the largest private collection in the world, displayed with curatorial care. The ground floor opens at 3pm and takes no reservations, so arriving at or near opening is the reliable way in without a wait; the downstairs Set Menu Experience is booked on OpenTable, available Saturday and Sunday.
