Dabiz Muñoz’s DiverXO has held three Michelin stars since 2013 and has occupied the ground floor of the NH Collection Eurobuilding since 2014: a theatre of a dining room where the tasting menu runs for hours and nothing arrives the way you expect.

Tables are released online in monthly drops and disappear within minutes. There is no telephone route and no shortcut — set an alarm, and book for two if you want a chance.
