ŌME: six stools, one door, and corn ground on site

Roberto Ortiz Blanco cooked at elBulli and ran the kitchen at Punto MX. Behind a discreet door in Salamanca he now builds a Mexican omakase for six people at a time.

· Facts checked October 5, 2026

The door on calle Lombía gives nothing away, and neither does the room behind it: a counter with six stools, a Mesa del Chef for six more and a street-side salón seating around 18 to 20, all served by the open kitchen. The counter runs tasting menus — a Taco Tasting and a seasonal one, six passes at 100 €, with extra passes on request — while the salón has an à la carte menu at around 45 €.

The corn is nixtamalised on the premises, which is the argument of the place rather than a detail of it — the masa runs through the tacos, sopes and quesadillas that carry the meal. The team cooks and explains each pass as it lands. Book by phone or through the website; the counter takes six.
