Mercer's first house in Madrid — the group's ninth establishment — opened in April behind the Prado, in the former headquarters of the Sociedad General Azucarera: Eneko Atxa in the kitchen, Javier de las Muelas at the bar.
The hotel opened on 20 April 2026 at Ruiz de Alarcón 5, steps from the Prado and the Retiro, with 61 rooms and suites. The building dates from 1905, was designed by Enrique María Repullés y Vargas — architect of Madrid’s Stock Exchange Palace — and served as the headquarters of the Sociedad General Azucarera de España before RCCyP Arquitectura converted it.
La Sociedad Gastronómika has a room with an open kitchen for twelve diners and a private cellar for sixteen. The cocktail room, La Azucarera, is run by Javier de las Muelas. On the plate: tempura loin over txistorra juice with grilled peppers, or the oyster with chimney-butter air and Joselito 5J crisp. The rooftop holds a pool, a solarium and a panoramic terrace open to the public.
