Nobu Madrid: eight seats on the third level

Fifty rooms in ten categories sit above a Nobu restaurant laid out over three levels, with an eight-seat sushi counter on the third; one floor below, the Cocktail Bar runs vinyl hi-fi and music programming Wednesday to Saturday. The house canon holds: black cod miso, rock shrimp tempura, yellowtail sashimi.

The seventh-floor rooftop is the first Nobu rooftop in the capital, with a lighter list of its own — sea bass and coconut ceviche, rock prawns with shiso — and DJ sessions from Wednesday to Saturday. The Rooftop runs daily from 5pm to 11pm; go as afternoon turns to evening, when the view runs down Calle de Alcalá to the Metrópolis building. The lobby lounge takes non-residents from the morning.
