Jack's Club: a piano bar in a vanished church

Under the Thompson on Plaza del Carmen, a British-minded speakeasy built into the remains of San Luis Obispo, where the cocktail list is written as chapters.

The bar opened in November 2025 in the hotel’s basement, on the site of the former Church of San Luis Obispo, keeping architectural elements more than two centuries old. The reference is the gentlemen’s clubs of Edinburgh’s George Street: dark noble wood, leather, tartan, antiques, bronze stonework and British countryside works by Francisco Segarra.

The menu is built as stories, each cocktail drawn from a chapter of Scottish and British literature and folklore. Thursday to Saturday a pianist plays rock, pop, soul and jazz covers; later the soundtrack shifts to funk and soft house.
