Salmon Guru

Diego Cabrera opened Salmon Guru in 2016 in a former bar behind Huertas, and within a few years it was Madrid’s most talked-about cocktail room: the green ceiling, the comic-book murals, the mezcal list, the back room that fills after midnight. A regular on The World’s 50 Best Bars list ever since.

There are no reservations for the front bar — arrive before 9pm or wait it out. The two counter seats we hold each week go to members.
